  • 3-4 medium-sized potatoes, peeled and diced
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced

  • 1 can (400g) of crushed tomatoes or 2 fresh tomatoes, chopped
  • Fresh basil leaves
  • Grated Parmigiano-Reggiano cheese (optional)
  • Salt
  • Black pepper

  1. In a large pot, heat the extra virgin olive oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent.
