  • 800g (about 28 oz) of ripe tomatoes, peeled and chopped (you can use canned tomatoes if fresh ones are not available)
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1/2 cup of fresh basil leaves, torn into small pieces
  • 1 liter (about 4 1/4 cups) of vegetable or chicken broth
  • Salt and black pepper to taste

  1. If using fresh tomatoes, blanch them in boiling water for about 30 seconds, then peel, seed, and chop them. If using canned tomatoes, skip this step.
