  • 1 can (400g) of diced tomatoes
  • 1/2 cup of black olives, pitted and sliced
  • 2 tablespoons of capers, rinsed
  • 3 cloves of garlic, minced
  • Fresh basil, chopped
  • Extra virgin olive oil
  • Salt and black pepper to taste
  • Grated Pecorino or Parmigiano-Reggiano cheese for serving


  1. In a large pot, bring salted water to a boil. Cook the Paccheri pasta according to the package instructions until al dente. Reserve a cup of pasta cooking water before draining.
  2. In a large skillet, heat a generous drizzle of extra virgin olive oil over medium heat. Add the diced eggplant and sauté until it becomes golden brown and tender.
